Coconut Bars

A friend brought these to a gathering tonight and they were delicious!! Thanks for sharing the recipe, Veronica!

1 cup shredded coconut
2 tablespoons coconut oil
1/4 cup Sweetener of your choice (agave, maple syrup, I like 1/4 cup
Coconut sugar with a little hot water to dissolve it)
1 teaspoon vanilla
1/8 teaspoon salt
(you can also melt 1/2 cup chocolate chips and add… I prefer a little more salt if I am adding chocolate which gives it a sweet and salty flavor).

Mix all ingredients in a cuisinart, then lay flat in a dish and refrigerate for 45 mins or freeze for 15 mins.
You can also make balls and roll them in shredded coconut then refrigerate.
Keep refrigerated, they should last a couple weeks, however, I’ve never had them last more than 2 days because I eat them all!
