Quinoa Salad

Yesterday I went to a potluck birthday party for my brother. He requested that I bring a side-dish, so I decided to make a quinoa salad. It turned out quite tasty. This recipe can easily be adjust using whatever ingredients you have on hand.

The recipe below makes a very large bowl full. Probably 10 – 12 servings.

Ingredients:

Quinoa Salad

2 cups uncooked quinoa
3 large carrots, grated
2 celery sticks, diced
1/2 jicama, grated
1/4 cup raisins

Dressing ingredients:
1/3 cup apple cider vinegar
2-3 tbsp. mustard
1 tsp. honey
1-2 tbsp. dill
3 cloves of garlic, crushed
Fresh basil, chopped finely
1/4 cup olive oil
Salt to taste

Directions:

  1. Rinse quinoa, add 3 cups of water, and ~1 tsp. salt. Bring to a boil then turn down to low and let simmer for about 15 minutes.
  2. While quinoa is cooking prepare all of the other ingredients. I used a food processor to grate the carrots and the jicama, which made it quick and easy.
  3. Toss all ingredients together in a large bowl. Add the dressing and mix together well.
  4. Refrigerate until cold and then taste and adjust as needed.
  5. Enjoy!
