Sweet Potato Shepherds Pot Pie

This week I decided to experiment a little bit. I had a pie crust I wanted to use up, some ground beef from Sun Farms in West Marin, sweet potatoes, and a few other veggies. What could I make? What came to mind were shepherds pie and chicken pot pie… so I made a sort of hybrid of the two. It ended up being DELICIOUS! The recipe may look a little complicated, but it didn’t actually take that long to prep and get into the oven. Let me know if you have any questions about it. Enjoy!!


  • 2 large sweet potatoes, cut into pieces
  • 1 – 2 Tbsp. olive oil
  • ½ – ¾ lb. ground beef
  • 1 small onion, chopped
  • 4 stalks celery (or more), chopped
  • 2 – 3 carrots (optional), cut into small pieces
  • 2 medium zucchini, cut into small pieces
  • 1 cup frozen peas
  • dried oregano
  • 1 Tbsp. curry powder
  • salt and pepper (to taste)
  • 1 – 2 Tbsp. butter
  • 1 Tbsp. flour (or 1 – 2 tsp. corn starch)
  • 1 – 2 cups liquid
  • 1 pie crust (optional)


  1. Preheat oven to 400.
  2. Mix the olive oil and the sweet potatoes in a small pot. Start at a medium high heat, then turn down to low, cover and let cook until sweet potatoes are soft. Stirring occasionally to keep from sticking to the bottom. A little liquid can be added to help cooking process.
  3. In a separate frying pan, sauté the onions. Chop and add celery and carrots to the onions. Add a little salt.
  4. Add the ground beef. Use a spatula to break apart into small pieces.
  5. Add curry, oregano, salt and pepper.
  6. When beef is almost cooked through, add the zucchini and peas. Stir, then cover and let simmer for about 5 minutes.
  7. Melt butter, mix flour into the melted butter, then add ~1 cup liquid to it, stirring constantly. Salt and seasonings can be added to this. (Or you can simply mix corn starch with cold liquid until smooth.)
  8. Pour into beef mixture and stir together. (This will help thicken it.)
  9. If you’re using a piecrust, put it in the pie plate.
  10. Place the meat mixture into the pie plate about ¾ of the way full
  11. When the sweet potatoes are soft, add 1 – 2 Tbsp. butter and 1 cup of liquid. Mash it all together with a fork or potato masher.
  12. Layer the sweet potatoes on top of the meat in the pie plate.
  13. Bake at ~400 for 35 – 40 minutes.
  14. Enjoy!
